Why people are talking about it

Smashed avo on toast is practically an Australian icon. Adding sauerkraut is a popular gut-health twist.

Why it's gut-friendly

Wholegrain bread and avocado both add fibre. Raw, refrigerated sauerkraut can contain live cultures.

Ingredients

  • 1 slice wholegrain or sourdough bread
  • ½ avocado
  • 2 tbsp refrigerated sauerkraut
  • Squeeze of lemon
  • Pinch of salt and chilli flakes
  • 1 tsp pumpkin seeds

Method

  1. Toast the bread.
  2. Smash the avocado with lemon and salt.
  3. Spread on toast and top with sauerkraut, chilli and pumpkin seeds.
Good to know

Shelf-stable sauerkraut in a tin or jar on the supermarket shelf is usually heat-treated, so it won't have live cultures. Look in the fridge section.
