Why people are talking about it
Chia pudding is a long-time favourite of 'healthy breakfast' feeds and a staple of high-fibre eating trends.
Why it's gut-friendly
Chia seeds are rich in fibre and form a gel as they soak. Each serve gives a solid fibre boost.
Ingredients
- ¼ cup (40 g) chia seeds
- 1 cup (250 ml) coconut milk or milk of choice
- 1 tbsp maple syrup
- ¼ tsp vanilla
- 1 mango
- Passionfruit pulp and toasted coconut to serve
Method
- Whisk chia, milk, maple and vanilla in a bowl.
- Rest 5 minutes, whisk again to break up clumps.
- Cover and refrigerate for at least 4 hours or overnight.
- Blend half the mango and layer with pudding in glasses. Top with diced mango, passionfruit and coconut.
Make it yours
- Chocolate: add 1 tbsp cacao.
- Layer with kefir or yoghurt.
- Berry swirl: blitz frozen berries instead of mango.
